Broccoli (Brassica oleracea) is a vegetable plant of the cruciferous family related to cauliflower. Broccoli originated in Asia Minor and was initially known in Europe only in Italy. From the 16th century, its use then spread through France and England to the United States. Broccoli is rich in a variety of vitamins and minerals: Potassium, calcium, phosphorus, iron, zinc, sodium, vitamins B1, B2, B6, E, C and A are abundant. It also contains numerous secondary plant compounds such as flavonoids, glucosinolates and isothiocyanates. The most important of the isothiocyanates is sulforaphane.

Sulforaphane is a mustard oil and a powerful antioxidant. Unlike other antioxidants such as vitamin C or vitamin E, it neutralizes free radicals indirectly by activating certain enzymes, which in turn initiate sustained antioxidant defense mechanisms in the body. In this way, cells can be effectively protected from damage. In the context of cancer treatment and prevention, there are promising results on sulforaphane from animal models. Currently, these results are being examined in more detail in several studies in humans1.

Ascorbic acid is an organic acid that can exist in various forms. The most important of these are grouped under the name vitamin C. Due to the easy oxidizability of vitamin C, it acts as an antioxidant or radical scavenger in the organism. It is also an indispensable coenzyme in the process of biosynthesis of collagen. Since collagen occurs mainly in connective tissue, but also in practically all other human and animal cells, a deficiency of vitamin C can accordingly lead to scurvy, affecting on the one hand the connective tissue, and on the other hand symptoms such as exhaustion and fatigue. The multiple effects of vitamin C on health are scientifically very well studied and confirmed by the European Food Safety Authority (EFSA).

What is the difference between vitamin C and ascorbic acid?

Ascorbic acid is an organic acid that can exist in four different forms. However, of these forms, only L-ascorbic acid is biologically active. L-ascorbic acid and its derivatives (derivatives) with the same effect are grouped under the name vitamin C.
Although ascorbic acid (vitamin C) generally acts as an acid in some contexts from a chemical point of view, it does not change the body's pH to any relevant extent and therefore does not lead to heartburn.
