Vicia faba, also known as field bean, belongs to the family of legumes. Its use goes back many years, as early as 6000 BC, the field bean was already cultivated. Gradually, it spread as a crop from the southern Mediterranean to Central Europe. In addition to the main components such as carbohydrates and proteins, the up to 2 meters high field bean also contains the amino acid levodopa (L-dopa). Even though the plant's beans contain L-dopa, they are not suitable as a source of levodopa in the normal diet because it is mostly destroyed during cooking.
L-dopa is a precursor of dopamine, an important neurotransmitter in the human brain. Dopamine is involved in the control of motor, mental and emotional reactions.
